View from the kitchen sink: chicken and polenta lunch



Today we had a great lunch.
This is important, because we have a little less free time this week.
We both had to work on Friday. We are heading up to San Pablo house to bring back the bed.

I have been craving polenta lately. I made a pot of it on Wednesday, and the sack was sitting there today. I looked up baked polenta recipes online and found a way to start the polenta on the stovetop and then tranfer it to the oven to finish cooking.

Here is the cost of our delicious lunch:

salad:
.25 lettuce
.25 mixed green bean salad
.12 cheese
.25 4 cut up asparagus (c0oked)

Chicken:
.50 (1) skinless thigh (baked in the oven)

Polenta:
.30 (1) serving of polenta
.25 leftover tomato sauce (warmed) from a can used previously for pizza

.30 soda from a two-liter bottle of Diet Rite (no caffeine) Cola
---------
1.92 total for a pretty great lunch

1.42 if I had just had water and ice

Not everything good has to cost a lot, as you have shown! There's something very comforting about polenta.
